Remoulade

 

Remoulade or rémoulade, invented in France, is a popular condiment in many countries.Remoulade is very popular in France,

Denmark, Germany, and in the United States, especially in Louisiana Creole cuisine. It is used with french fries, on top of roast

beef items, and as a hot dog condiment, although there are a multitude of other applications. In Denmark it is an essential ingredient

on the Danish open-face roast beef sandwiches (smørrebrød), along with roasted onion. Remoulade is also used for fish meatballs

or breaded fillets of fish (e.g. cod or plaice) along with lemon slices. In most regions it is used on Danish hot dogs along with mustard,

ketchup, roasted or raw onions and pickled cucumber slices.

Ingredients

200 g. mayonnaise

1-2 tbsp. vinegar  (white balsamico)

1-2 tsp. Dijon mustard 

1 tbsp. chopped pickles

1 tbsp. capers

2-3 tbsp. chopped parsley

½ tbsp. fresh tarragon or 1 tsp dried 

Green remoulade

4 tbsp. mayonnaise

3 tbsp. nicely chopped gherkins

1 tsp. Dijon mustard

1 tbsp. sweet mustard

1 tbsp. chopped parsley

1 tbsp. chopped chervil or chives

1 tbsp. chopped capers

1 tbsp. nicely chopped onion

Salt and pepper

Everything should be mixed together and seasoned with salt and pepper.
