Brown Potatoes/Sugar Potatoes
Recipe for 4 persons.
Ingredients:
600 grams small potatoes, peeled weight
3 tbsp. sugar
30 g. butter
Boil the potatoes, peel and allow to cool, or can be used potatoes from glass. Melt sugar in a large frying
pan over very low heat. Once it begins to brown and is completely melted, add the butter. It is very important
that you do not stir the sugar when it is melting. When butter and sugar are boiled together to a uniform golden
brown mass, add the potatoes. The potatoes should be moist (not wet) (due to cold water and drain in a sieve).
Be careful of the hot splashes when the potatoes are added to the sugar mixture.
