Smørrebrød (originally smør og brød; Danish for "butter and bread") usually consists of a piece of buttered rye bread
(rugbrød), a dense, dark brown bread. Pålæg (literally "on-lay"), the topping, then among others can refer to commercial
or homemade cold cuts, pieces of meat or fish, cheese or spreads. This daily practice is the base on which the art of the
famous Danish open sandwich, smørrebrød is created: A slice or two of pålæg is placed on the buttered bread, and then
pyntet (decorated) with the right accompaniments, to create a tasty and visually appealing food item.

Recipe for 1 person:
Ingredients:
1 piece of fish fillet (breaded)
1 piece of fish fillet (rolled, not breaded)
75 gr shrimp
75 gr asparagus (preferably the fresh in the summer)
1 slice of white bread
Butter, salt, pepper
2 dl. white wine
1 lemon
1 cucumber slice
1 tsp. Caviar
1 Tbsp. sour cream/creme fraiche
1 Tbsp. ketchup
A bit of juice from the asparagus
1 lettuce leaf (Lolla rossa, lettuce)
Dill
1 slice of tomato

Fry the breaded fish fillet in a pan with a bit of fat at moderate heat. Put the rolled fillet in a pan, add white
wine and lemon juice, sprinkle with salt and pepper and steam it on the stove.

Mix sour cream, ketchup and asparagus water together and season with salt, pepper and lemon juice.

Toast bread in the pan from the fish.

Arrange bread on a plate and come lettuce leaf on. Put the fried fish on the bread and lay the steamed
fish on top.

Run the red sauce down the steamed fish and garnish the fish with asparagus and shrimp.

Top the fish with a slice of cucumber, lemon, tomato, dill and caviar.

Garden Cress
Spread a layer of liver pate on the rye bread. Top it with a slice of corned beef and a slice of meat aspic.
Decorate with raw onion rings and garden cress. (You can also add lettuce beneath the slice of corned beef)

Toasted(risted) onion
Use a thin slice of roast beef and serve it on a piece of dark rye bread, topped with a portion of remoulade, and decorated
with a sprinkling of shredded horseradish and toasted (ristet) onion. You can also choose to add a pickle or tomato on top
and lettuce beneath.

Add the thin slice of pork roast on the dark rye bread, top it with red sweet and sour cabbage and decorate with a slice of

Raw egg yolk (pasteurized)
Add salt and pepper to the minced beef and shape a round steak. Put it on the piece of dark rye bread, top with raw
onion rings, grated horseradish, capers, and the raw egg yolk. Raw onions can also be added directly to the minced
meet. On the side pickles and pickled beats are recommended.

Bacon
Sautee the mushrooms and fry the bacon. Heat up the liver pate. Spread that on a piece of dark rye, and top it with
the sauteed mushrooms and bacon.
Smoked Salmon/Laksemad
A piece of white bread
Lettuce
A slice of smoked salmon(Cold smoked or cured)
Slice of lemon
Fresh dill
Put some lettuce on a piece of white bread. Add the slice of salmon and the slices of lemon on top. Decorate with fresh dill.
Shrimps can also be added on top to make it even more delicious.

Scrambled eggs
Slice of tomato
Tbsp. chopped chives
Scramble the eggs and let cool. Put the piece of smoked eel on top of the piece of dark rye bread. Top it with the
scrambled eggs, slice of tomato and the chopped chives. Tomato can also be substituted for sliced radices.

Handfull of shrimps

Mayo
A couple of slices of Cucumber
Slice of tomato
Salt and Pepper
Boil an egg and slice it. Put lettuce and cucumber on a piece of white bread. Top it with the the egg and shrimps.
Add mayo, salt and pepper. Eat tomatos on the side.
Potato/Kartoffelmad
Piece of dark rye bread
Cooked potatoes
Mayo
Tbsp. of chopped chives
Salt and pepper
Simple, yet delicious. Use leftover potatoes from last nights dinner or cook some new ones and cool. Slice them and
put on top of a piece of dark rye bread. Decorate with mayo and chopped chives. Season with salt and pepper.
